Mojito

  • about 8 spearmint leaves
  • 2 oz. light rum (Gannet)
  • 1 oz. fresh lime juice
  • 0.75 oz. 2:1 simple syrup OR 1 oz. 1:1 simple syrup
  • about 2 oz. club soda

In a highball glass, add mint and rum. Muddle gently. Add lime juice and simple syrup. Fill most of the glass with cracked ice. Stir with a barspoon. Top with club soda. Garnish with a mint sprig and serve with a straw.


Avoid over-muddling mint as it creates bitter flavours. The actual mint flavour is contained on the surface of the leaves and so all it takes is a light churning motion to release it. (This is also the reason why mint sprig garnishes are slapped in the palm). Some mojito recipes muddle whole citrus but I don’t recommend this. Peels can be over-muddled and it leaves pulp in the drink.
