Carroll’s Distillery


I have long had an appreciation for all spirits both neat and in cocktails. However, I’ve always been inclined towards rum. There exists a large variety of styles and so there is a rum for every occasion.

My family began exploring the distilling business in spring of 2018 and a small section of Carroll’s Bakery was renovated into a distillery in April 2019. Carroll’s Distillery opened for retail in March 2020 with plans to develop a full portfolio of rums, select liqueurs and rum cakes. While production focuses on light-bodied rums that are approachable and easy to appreciate, the main motivation for the project is full-bodied rums for the dedicated enthusiast.

In addition to being a rum geek, I am also an avid nature enthusiast. Birds are featured on the labels as a way to bring attention to local wildlife.
