Aged light bodied rum suited for a wide range of cocktails.

The same light rum blend as Gannet, aged at least one year in 200 litre ex-bourbon barrels. Each individual bottling comes from a single barrel.

The sandpiper was chosen for the label because they are birds I associated with the beach and summertime; which also happens be a great occasion for this style of spirit. The artwork was produced by David Scheirer on commission (2020) and is based off a picture of a Sanderling taken at Baie de Petit-Pokemouche, New Brunswick.

What are aged rums?

Aged rum are rums that have been stored in wood casks for a certain period of time. The majority of rums in North America are aged.

Over time, the wood infuses into the spirit, chemical reactions are allowed to occur and harsh volatile substances (when present) have a chance to evaporate. This is not to be confused with spirits infused with oak chips in closed containers. The later is not aging.

Some products declare on the label the amount of time the spirit spend in casks. This takes the form of “aged x years” or “x years aged”, explicitly. Some labels do not declare age, but rather chose the spirit based on maturity. The amount of aging will therefor vary depending on the batch.
